Juk, Congee, Okayu, Lúgao - what do you put in it?
I'm making Juk tonight since I'm not feeling so great. I usually make it with oyster mushrooms, soybean, rice & chicken and garnish with ginger, green onion, soy sauce & sesame oil.
What other varities are there and what's your favorite? I'd love to mix it up a bit and try something different.
the hardcore use "thousand year old egg" (with soy sauce). Can you handle that? Thousand year old egg was on Fear Factor once, and all the contestants gagged on it. Wimps.

Ya I saw that episode. I just couldn't believe it cause god damnit do I love that shit! Especially in my Jook with some freshly made Chinese donuts!! Aww shit!
I actually do like 1000yr old egg. But maybe because it's nostalgic for me. Comfort food. Like Marmite for the Brits.
I don't know enough about cuisine to offer suggestions, but I know congee is really good with scallions.
Also, oftentimes, congee will be served plain (just rice cooked into a mush with water. no meat, vegetables or seasonings), the idea being that you have small, tasty dishes to go with it on the side (scrambled eggs with ham, is a fave. pickled/preserved veggies are good too), but the purity of the congee is left intact. That's my favorite way of having congee. And, that's probably the best way to have it if you're feeling sick.
